TV's Food Network chef dined like a king

THE JAPANESE CONNECTION: What do you cook when the boss is in the house, hosting an international culinary wizard? That was chef Elmer Guzman's dilemma when Sam Choy brought the TV Food Network Iron Chef Masaharu Morimoto to Sam Choy's Diamond Head for dinner last week. Guzman, who earned his cooking stripes under another celebrated kitchen king, Emeril Lagasse, prepared moi ceviche, a poke sampler, mussels with saffron fennel broth, Scottish salmon with miso and cilantro oil, filet and prawns with shiitake mushroom cream sauce and roasted garlic and edamame butter sauce, and braised foie gras on kalua pig bread pudding. Yum!

Choy lured Morimoto here to cook a multicourse meal together for a Big Brothers Big Sisters Gourmet Affair last Saturday night at the Hilton Hawaiian Village. As an aloha shirt-clad diner (his shirt boasted a Santa print) and without his signature toque, Morimoto looked like just another visitor enjoying a casual night out ...

That was sumotori Konishiki, who also is a rap star, checking out Tihati's "Creation — A Polynesian Odyssey" show at the Sheraton Princess Ka'iulani Hotel's 'Ainahau Ballroom the other night, in the company of martial arts actor Steven Seagal. Seagal has been in Waikiki to film a Japanese TV show at the Sheraton Moana Surfrider with Nippon supermodel Anna Umemiya. The show, "Tunnels Minasan No Okage Deshita," is one of Japan's top variety programs, reaching 17 million viewers. Sheraton chefs Ralf Bauer, Daniel Delbrel, Clifton Kaholokua and Alfred Cabacungan will be part of the telecast ...

NAMES 'N' PLACES: That "Hulawood" benefit for Hawai'i Theatre, slated for tonight at the Kahala Mandarin Oriental, will dwell on the music from "South Pacific" because the original film was partially shot in Hawai'i (Kaua'i), Stefanie Smart will do "Bali Hai" and Keoki Kerr will offer "Some Enchanted Evening." KHNL-8, the lone holdout on clock time, was still airing NBC's "Dateline" when the other stations were live with Ginoza. Whatever happened to "Live, local, late-breaking"? ...
