Soaking garlic makes it easier to peel

To peel garlic cloves faster and easier: Soak bulbs in water to soften. To roast, place peeled cloves in a shallow baking dish and cover completely with olive or vegetable oil. Bake in a 375 degree oven until tender. Strain oil and save for vinaigrettes, marinades and sauteeing.
