Culinary Calendar

Friday

SAM CHOY COOKING DEMONSTRATION, 7 p.m. at the Hawaii State Farm Fair at Aloha Stadium. Agricultural exhibits and sampling from Hawai'i farmers 6 p.m.-midnight, sponsored by the Hawaii Farm Bureau. Fair continues noon -midnight Saturday and Sunday. Adults $3, children 5-12 $1.50, children under 5 free.

IT'S CHILI IN AUGUST, a tasting event of spicy peppers, 6:30 p.m. at the Halekulani Hotel. Chili pepper expert Hector Valenzuela of the University of Hawai'i-Manoa's Department of Horticulture will talk about different chili varieties followed by a vertical chili pepper tasting. After the tasting and informational session, attendees can graze on "haute" chili preparations including chili-rubbed shrimp, skewered stuffed peppers, chili pepper crepes and chili vanilla ice cream. $55 per person, inclusive. 931-5040.

Saturday

GUEST CHEF RON SIEGEL of Masa's restaurant, San Francisco. will be at the Lodge at Koele, Lana'i, through Sunday. Special dinner menus each night, cooking demonstration at 3:30 p.m. Sunday. (800)321-4666.

AN EVENING IN PARADISE, 6:30 p.m. at The Orchid at Mauna Lani, on the Big Island, a food grazing event featuring top chefs from the Big Island and O'ahu. A benefit for the Big Island United Way campaign; $60 per person, fully tax-deductible. The Cruz Family will entertain; television personalities Kim Gennaula and Guy Hagi will be hosts of the event. BETTER PROCESS CONTROL SCHOOL, a four-day professional course on the manufacturing of food products sponsored by the University of Hawai'i-Manoa and approved by the U.S. Food and Drug Administration. Classes will be 7:30 a.m.-5 p.m. each day; $550 per person. For details: 956-6564.
