Pasta needs lots of water, sufficient salt

Pasta needs lots of water to cook. For a pound of pasta, enough for four people, you need about four quarts of water and about 1 3/4 tablespoons of salt. The salt is vital: Without it, your pasta will lack flavor. After cooking, pasta should be drained and tossed immediately with the sauce; don't rinse pasta because the starch that adheres after boiling helps the sauce stick to the pasta.
