Use dried shrimp as a flavor enhancer

When you want shrimp flavor in soups, stir-fried dishes or a green papaya salad, these tiny pink-orange plump shrimp will do the trick. Soak them in water or steam them for 10 to 15 minutes to soften; chop them or leave them whole. They can be fried and eaten as pupu; their flavor is intense but essential in many Southeast Asian and Chinese dishes. Dried shrimp also can be ground into a powder used for its flavor-enhancing qualities.
