Chef Patrick Saito moves to Outrigger

Patrick Saito has been named chef de cuisine of Hawaii Calls restaurant at the Outrigger Waikoloa Beach Hotel on the Big Island. Saito previously was at the Mauna Lani Bay and Bungalows' Canoe House restaurant. He is a graduate of Kapi'olani Community College and worked with chef Roy Yamaguchi on O'ahu.

Contests seeking saucy new recipes

• The Kikkoman "Signature Sauce" recipe contest is searching for a soy-sauce-based recipe for a sauce that can be used to make a number of dishes.

Entrants submit a sauce recipe, a recipe that incorporates the sauce and two additional ideas for using the sauce. Grand prize is a culinary adventure for two in Japan.

• Tabasco's Cook and Ladder Competition is open to firehouse chefs with original recipes for appetizers, soups, salads, main dishes, side dishes or desserts. Recipes must use one of the four Tabasco-brand pepper sauces.

Ten finalists will be flown to a cook-off on Feb. 5, 2002, in New York City. Grand prize is $10,000 split between the firefighter and firehouse. Firefighters with professional culinary training are not eligible.
