Hoisin sauce makes sizzlers more savory

Hoisin sauce, a key ingredient when grilling and roasting meats and poultry, comes alive with other ingredients.

Soybeans, sugar, garlic, five-spice mixture and a hint of chili are mashed together to make hoisin sauce. The resulting thick, brownish-red paste has a slightly sweet and tangy flavor that is well liked for its versatility.

Hoisin has become a key ingredient in marinades and sauces for grilling and roasting meats and poultry. Straight from the bottle, hoisin can be a bit too intense, covering up essential flavors. Mixed with a little sesame oil and sugar, it is the preferred accompaniment for Peking duck and mu shu pork. Mix it with soy sauce, sugar and other seasonings for a more balanced but flavorful sauce.
