Basmati rice fragrant, flavorful

Basmati is a slender long-grained rice with lots of aroma and a slightly nutty flavor. Its name means "queen of fragrance" in India. When cooked, basmati grains stay separate (it is less starchy than jasmine rice) are fluffy and expand lengthwise. Immerse basmati rice in water 1 cup of rice in 2 1/2 cups of water for 20 to 30 minutes; drain, then cook with 1 1/4 cups water. Basmati rice cooks in about 15 minutes. Texamati is an American hybrid.
