Frittata gives leftovers a second life

Lots of little leftovers? Small portions of meats, veggies, pasta and rice can be combined with a few beaten eggs to make a delicious frittata. Over medium heat, warm the leftovers in a wide skillet with a little oil or butter. Add beaten eggs; cook until set. Serve hot or at room temperature. Great for picnics.
