Puerto Rican specialties on menu

Patricia Wilson will be guest chef at the W Honolulu Hotel's Diamond Head Grill, 6-9 p.m. tomorrow.
Wilson, a professor at Johnson & Wales University, is in Honolulu teaching Hispanic and Latin American food specialties at the Culinary Institute of the Pacific at Kapi'olani Community College, and on Neighbor Islands.
Wilson's "Taste of Puerto Rico" menu will include conch and green banana escabeche; pinon (ripe plantains layered with salt cod on tomato coconut sauce); roast lechon (seasoned fresh pork) with tamarindrum glaze; and sopa borracha (traditional caramel flan) on rum-soaked cake with candied tropical fruits.
Dinner is $55 per person, plus tax and tip. 922-3734.
