Hy's Steakhouse executive chef Almar Arcano has worked in various kitchens around the Islands and would someday like to become a restaurant critic around the world. His favorite food: steak, of course!

Born: Philippines; in Hawai'i 29 years.

Culinary background: Culinary training at Maui Community College, Kapi'olani Community College and Culinary Institute of America, Hyde Park, N.Y. Has worked in the kitchens of the Maui Hilton, Royal Lahaina Hotel, Hilton Hawaiian Village Hotel, Ala Moana Hotel, Hyatt Regency Hotel, Bandito's Cantina.

His approach: "My cooking style is American-Continental cuisine. I love to cook with pumpkin flowers, bittermelon leaves and watercress."

Favorites:

Meal: A 30-ounce rib-eye steak with cabernet wine sauce

Comfort food: Vegetable ramen

Cookbook: "Professional Chef" by the Culinary Institute of America

Cooking show: Ming Tsai's "East Meets West"

Kitchen tool: Chef's knife

When I'm really hungry I grab: Saimin

When I'm not working I like to: Watch a Lakers game, read cookbooks and watch movies

When I go out to eat, I like to: Go to a Japanese restaurant; I love sashimi, sushi, noodles and tempura.

If I could invite any three people to dinner, I would invite: Demi Moore, Julia Roberts and Magic Johnson
