Oyster sauce gives dishes added punch

Oysters give this thick, dark brown sauce its savory flavor. It's a concentrated sauce that's salty with a slightly smoky flavor.

Use it straight from the bottle over stir-fry and noodle dishes; it is often used with oil over steamed greens.

Drizzle a little over scrambled eggs in place of salt or soy sauce.

To cut the saltiness, add some mirin or sugar and a little chicken broth.

Expensive brands (usually less salty) are worth it for their flavor; refrigerate after opening.
