Cook's Tips
Keep liquids covered to avoid evaporation

Keep liquids like vinegar and soy sauce covered. Otherwise, liquids evaporate and become too strong. When buying flavored oils (olive, sesame, walnut, etc. ), purchase small bottles unless you plan to use them quickly. These oils tend to go rancid if kept for a long time; refrigerate them. They will solidify but will liquefy once you take them out of the refrigerator.
