Honolulu Cookie Co., until now a well-kept secret with a primarily wholesale business in Kalihi, is celebrating a grand opening this week of its retail outlet at 1717 Homerule St. (a couple of blocks makai of Nimitz off Kalihi Street). They're the makers of a line of beautifully packaged, distinctive pineapple-shaped shortbread cookies originally developed for the Waikiki tourist market. Their signature is an exceptionally full-flavored pineapple macadamia shortbread; they also have six other flavors ranging from plain butter-mac to triple-chocolate. Prices range from $2.95 for a box of 5 and $3.95 for a box of 8 to $90 for a fancy gift basket with cookies, coffee and candy.

Keith and Janet Sung, who have operated various business in the Islands since 1980 decided to found Honolulu Cookie Co. when they realized that most of the gourmet cookie market was located on other islands. Sung has worked hard to differentiate his product from the market-dominating Big Island Candies, he said. Recently, with tourism business dropping, the Sungs decided to begin doing retail and they've also developed a partnership with Creations By You to do heart-shaped wedding-favor cookies. The store hours this week are 9 a.m.-5 p.m. today through Friday, 10 a.m.-3 p.m. Saturday and Sunday. In the future, the store will be open 9 a.m.-5 p.m. weekdays and 10 a.m.-2 p.m. Saturdays, and closed Sundays.
