Popsicles that beat the heat

A refreshing summer cooler and healthy snack for hot summer days.

Kiwifruit Popsicles

  • 4 kiwifruit
  • 1 6-ounce can lemonade concentrate, thawed
  • 2 cups water

Peel kiwifruit. Place in blender or fruit processor and puree until smooth. Combine with lemonade concentrate and water. Pour mixture into 10 small popsicle molds or paper cups; place in freezer. When partially frozen, place popsicle sticks in center of cups and freeze until firm. Makes 10 popsicles. Recipe from the New Zealand Kiwifruit Marketing Board.

Nutritional information per popsicle: 49.9 calories, .4 g protein, 12 g carbohydrates, .8 g dietary fiber, .2 g fat (4% calories from fat), 0 cholesterol, 1.25 mg sodium.
