Here's a successful sack lunch for kids

How do you spell a successful sack lunch?

Start with tuna packed in water, add some flavorful mixers and fill a pita pocket for a lower fat, crunchy tuna sandwich.

Pair it with jicama slices and a box drink for a healthy school or office meal.

Enticing Tuna Pocket

  • 1/4 cup nonfat plain yogurt
  • 2 tablespoons orange juice
  • 1/2 teaspoon grated orange peel (optional)
  • 1 cup shredded carrots
  • 1/2 cup raisins
  • 1 6-ounce can chunk white tuna, drained and flaked
  • 4 lettuce leaves
  • 8 prepared sandwich sliced pickles
  • 2 pita breads, cut in half

Mix yogurt, orange juice and orange peel. Stir in carrots, raisins and tuna. Place lettuce and pickle slices in pita halves. Spoon in tuna mixture. Makes 4 sandwiches. (Recipe from Vlasic Inc.)
