Caribbean chicken and rice salad

"There's a wonderful fast-food place in Kahala Mall called the Gourmet Express," writes Penny Lauhn of Honolulu. "Their salads are scrumptious, especially the Caribbean chicken salad made with brown rice and black beans. Could you get them to share their recipe?"
Owner Lisa Bos of the Gourmet Express was happy to share her recipe for this healthy salad.
The dressing uses Pickapeppa sauce, which can be found in supermarkets. The Ginger Miso dressing is a bottled dressing made by Valerie Pursel under the label That Personal Touch. It is available at Gourmet Express and many Island health food stores.
Caribbean Chicken Salad
- 6 cups cooked brown rice
Dressing:
- 1 cup fresh lime juice
- 2 tablespoons molasses
- 1 cup Pickapeppa sauce
- 2 tablespoons canola oil
- 3 teaspoons garlic, minced
Salad:
- 2 cups canned black beans, drained and rinsed
- 3 pieces of cooked chicken thigh or breast meat, skinned and boned, and chopped (about 2 cups)
- 1/4 cup Ginger Miso dressing
- 1/2 cup green onions, thinly sliced
- 6 tablespoons chopped fresh Chinese parsley
- 2 jalapeno peppers, seeded and finely chopped
- 1 large red bell pepper, cut into 1/4-inch dice
- 1 large green bell pepper, cut into 1/4-inch dice
- 1 large yellow bell pepper, cut into 1/4-inch dice
Mix together dressing ingredients. Marinate chicken pieces in Ginger Miso dressing for a few minutes. Combine all ingredients and toss thoroughly with dressing. Makes six servings.
