Pasta doesn't need a flood of sauce

Don't drown pasta in sauce. The Italian tradition is to toss the pasta with just enough sauce to coat it without leaving a puddle on the bottom of the bowl. A knife has no place on a table when pasta is served. Instead of cutting, twirl a few strands around a fork and use a spoon to mix the sauce and pasta, and to help with juicy sauces.
