Need quick fish stock? Try clam juice

When a recipe calls for fish stock, you can substitute "rescued" bottled clam juice: Combine 3 cups bottled clam juice with 1 cup water, 2/3 cup dry white wine, 1/2 cup thinly sliced onion, 2 leafless parsley stems and 1/4 teaspoon whole peppercorns and simmer, partly covered, 30 minutes. Strain and add water to make a quart.
