• LOCAL INTEREST: "Hawai'i Cooks with Roy Yamaguchi," 7:30 p.m., PBS. The cooking series makes its encore with a visit to McCully/Mo'ili'ili.

• TONIGHT'S MUST-SEE II: "The Hughleys" season-opener, 8 p.m., UPN (seen on KFVE). Starting its fourth season, this show keeps tackling tough issues. "It's an episode on drugs," says D.L. Hughley, producer and star. "I wanted it to be provocative, but it won't be preachy." What happens when kids learn about their parents' past drug use? That's part of this evolving series. The original idea — reflecting Hughley's life — was of an urban guy, adjusting to suburbia. Now comes the next phase. "The trick isn't getting what you want," Hughley says. "It's wanting it when you have it."

"Biography," 5 and 9 p.m., A&E. Here's a profile of "Happy Days," which not only dominated the ratings, but saw its young stars become major Hollywood forces.

"One on One" premiere, 8:30 p.m., UPN. A decent chap (Flex Alexander) sees his life change: Instead of being with his teen daughter two weeks a year, he's in charge. The result is a so-so comedy, semi-salvaged by the likability of its stars, Alexander and Kyla Pratt.
