Maui sugar has smoky, nutty flavor

It's called plantation white raw sugar or washed raw sugar: It's sugar from Maui, produced by Hawaiian Commercial and Sugar Co. It's a barely beige large-crystal sugar, lighter in color than turbinado sugar. Both contain some molasses, which means you get more than just a sweet flavor when you make cookies, muffins and quick breads; you get a vaguely smoky, nutty background taste as well.
