COOK'S TIPS
Pan-toasting makes raw garlic spreadably sweet
If you love garlic bread but hate the bitter punch of too-raw garlic, pan-toast raw garlic before combining with softened butter and spreading on the bread. Cook's Illustrated learned that unpeeled, whole cloves, toasted in a frying pan over medium heat for exactly 8 minutes come out sweet and spreadable. Shake pan while toasting.
