Quick & Easy: Sesame sweet potatoes

If you've never seasoned sweet potatoes with ginger, you're missing something. This recipe draws on Asian flavors to complement the sweetness of the potatoes. Use a teaspoon of dried ginger if you don't have fresh.

  • 3 large sweet potatoes
  • 2 tablespoons vegetable oil
  • 2 teaspoons sesame seeds
  • Salt and pepper
  • 1 tablespoon finely chopped or grated fresh ginger
  • 2 tablespoons honey
  • 1/2 cup orange juice
  • 1 tablespoon soy sauce

Heat oven to 400 degrees.

Cut off the pointy tips of the sweet potatoes and discard. Peel sweet potatoes; cut them into one-inch squares.

Put the pieces in a wide, shallow baking pan or an ovenproof skillet. Drizzle with vegetable oil and stir the potatoes, turning to coat them with oil. Sprinkle with sesame seeds, salt and pepper. Place in the oven to bake for 30 minutes.

Combine ginger, honey, orange juice and soy sauce; stir to dissolve honey.

When the sweet potatoes have baked 30 minutes, pour the orange juice mixture over the potatoes, stir and bake 10 more minutes, until potatoes are tender and dressing has been absorbed.

Serves 4 to 6.
