Don't discard liquid from soaking dried mushrooms
Dried mushrooms must be properly cleaned and softened, but that liquid can be of use in stocks or as a cooking liquid. In a bowl, cover mushrooms with 1 1/4 cups boiling water and soften for 20 minutes. Run fingers around mushrooms to loosen sand and grit. Place a coffee filter in a strainer over a bowl; squeeze mushrooms dry, then pour mushroom liquid through the filter.
