Try freezing extra tofu to keep it from going bad

If you can't manage to get through a full tub of tofu before it goes bad (about a week, if you change the water daily), it can be frozen. Drain, wrap in plastic wrap and foil, or place wrapped tofu in zippered plastic freezer bag. After defrosting, press tofu between two plates over sink to drain. Tofu will be chewy and very absorbent, so plan to use it in stir-fries, not in anything that requires a smooth, creamy bean curd.
