Tonight's Must-See

"Uncut: The True Story of Hair," 6 & 10 p.m., A&E. In previous centuries, this documentary tells us, the same man who cut our hair might amputate our limbs. It wasn't a glamorous profession. Then that changed. The United States has 1.25 million licensed hairstylists. Worldwide, hair care is an annual $6 billion industry.

Some people keep reinventing themselves. The shorn, blonde Joan Jett we see here looks nothing like the raven-haired rocker of old. Dolly Parton, however, sticks to one look. "They say less is more," she says. "I say more is more." For decades, these games belonged mainly to women. Then they expanded. Years before becoming a rock star, David Bowie went on the BBC in 1963 to launch The Society for the Prevention of Cruelty to Long Haired Men. Both sexes were in the hair game. This light-hearted documentary ranges from drag queens to Jesse Ventura. It's fast and fun.

Of Note

"Boston Public" season-opener, 7 p.m., Fox. Joey McIntyre (New Kids on the Block) joins the cast. He plays a new faculty member from South Boston, where he hails from in real life. Two other newcomers, Jon Abrahams ("Meet the Parents") and Cara DeLizia, join the show in an episode centering on a student protest and on a girl who gives birth in the lavatory.

"Girls Club" debut, 8 p.m., FOX. David E. Kelley — writer-producer of "Ally McBeal" and "The Practice" — is back inside a law office. This time, he has three likable characters, young women in a male-dominated firm. As played by Gretchen Mol, Kathleen Robertson and Chyler Leigh, they balance personal warmth and career passion. The cases they're working on aren't nearly as interesting, though. In the main one, a handsome murder defendant (Scott Foley of "Felicity") is romantically obsessed with his lawyer (Mol).

"CSI: Miami," 9 p.m., CBS. In one case a priest is shot; in another a woman dies after a crash in a stolen car.
