Tonight's Must-See

• "In Search of America," 8 and 9 p.m., ABC. Peter Jennings wraps up his six-part documentary with back-to-back hours. The first takes a look at a Texas snack-food company taking its business global. The second visits Salt Lake City and looks at problems caused by immigration.

• "Heist" (2001), 6:30 p.m., HBO. Here's a solution to TV that seems too quiet and simple. David Mamet, the Pulitzer Prize-winning playwright, has written a crime story filled with twists and turns. Gene Hackman plays the old thief forced to do one more job. Layers pile atop each other until we don't know who's who. It's enough, however, to keep us watching.
