A paper sandwich helps you roll pastry

As an alternative to rolling pastry dough out on a floured surface, sandwich it between two large sheets of waxed or parchment paper. If the dough is sticky, lightly flour it before topping it with the paper. Starting at the center of the disk, roll away from you, giving the dough a quarter turn and repeating until shaped.
