Island recipe a hit in Baltimore

Kristine Snyder, who won the Maui Onion Festival recipe contest so many times they retired her jersey, last month achieved one of her life's goals: She won the 45th National Chicken Cooking Contest in Baltimore with her Pacific Rim Chicken Burgers with Ginger Mayonnaise. It's believed to be the first winner featuring ground chicken.

Snyder, a harpist who plays for weddings on the Valley Isle, said of her recipe: "I love Asian influences in our island foods, so I experimented by adding some of my favorite ingredients — ginger, cilantro, garlic — to come up with a refreshing taste in chicken burgers." Snyder walked off with $25,000. Left to try: The Pillsbury Bake-Off (she placed third nationally in 2000), or maybe the Beef Cooking Contest.


Merriman's to open at Waikoloa

Chef/restaurateur Peter Merriman will open Merriman's Market Cafe at King's Shops, Waikoloa Beach Resort, in the fall. The casual spot will feature Italian and Mediterranean-style food, indoor and outdoor dining, a full-service bar and a take-out delicatessen. Also at the King's Shops at Waikoloa: Roy's Bar and Grill.

Merriman is a founder of the Hawai'i Regional Cuisine chef's group, known for encouraging a close working relationship between food producers and restaurants. He now operates Merriman's in Waimea and Hula Grill on Maui.


Taste of Honolulu just days away

A heads up: Lots of Father's Day special menus are out there this weekend, from brunch to dinner. Check with your favorite restaurant.

And start starving yourself now for Easter Seals' 12th Annual Taste of Honolulu June 20- 22 on the civic center grounds in Honolulu. I'll be there with Y. Hata executive chef Ernesto Limcaco, giving a pair of cooking demonstrations on Saturday with the theme "Short-cut Cooking" — quick recipes you can prepare after work, one-pot dishes that won't destroy the kitchen. Limcaco, formerly of Taipan on the Boulevard, is a live wire and full of information. We'll be handing out some of his recipes along with Advertiser favorites. Even if you can't make it, check the Taste section next week for an interview with chef Limcaco and a sampling of his recipes.
