Pre-roasting makes veggie broth more flavorful
Make your own vegetable broth by roasting a selection of vegetables such as onions, garlic, celery, carrots, tomatoes and parsnips until tender, then simmering in water for several hours. Strain broth, discard vegetables. Use immediately or freeze.
