Saloon Pilot lovers get a recipe contest

Many treasured memories are intertwined with foods and recipes from our childhoods. Diamond Bakery understands that, so the Honolulu company has launched a contest, "Search for the Ultimate Diamond," in which they ask for Islanders' favorite recipes using those old-fashioned Saloon Pilot crackers and for heartwarming stories about the crackers. With the demise of the Hilo Macaroni Factory, Diamond is the only remaining manufacturer of Saloon Pilots in the Islands.

If I were to tell such a story, it would be about sopas — a Portuguese breakfast dish that consisted of hot, milky coffee and broken-up Saloon Pilot Crackers. It was my Grandpa John Duarte's favorite, and he used to slurp it with gusto!

La Mer holiday treat is for a good cause

If you're of a mind to give yourself an extraordinary treat this holiday season while helping a worthy cause, indulge in the Remy Martin Ultimate Dinner at La Mer, a multicourse tasting menu with cognac accompaniment. For each dinner sold, Remy Martin makes a contribution to the James Beard Foundation's scholarships and educational programs for young culinarians.

Chef Yves Garnier of the restaurant at the Halekulani has designed a menu that begins with sautéed foie gras, moves though a rare experience of abalone, an entrée of crispy-skinned moi, potatoes dressed with escargot and a black-rice risotto with langoustines, and finally a cheese course and special dessert, plus a taste of Remy Martin Louis XIII Cognac. It's $150 per person and available only for tables of two or more through Dec. 30.

In 2002, La Mer served more than 500 Remy Martin dinners; it was among 75 participating restaurants.
