Apples, rice cereal add kick to these peanut-butter rolls

ORRVILLE, Ohio Jessica Delaney of Princeton, N.J., is just 11 but already shows a creative edge in the kitchen. She was recently awarded top honors in the second annual Jif's Most Creative Peanut Butter Sandwich Contest for Kids.
Her recipe for Peanutty Wrapple Rolls with maple dipping sauce won first prize. It combines apples, rice-crisp cereal and peanut butter with a sprinkle of brown sugar, all wrapped up in a flour tortilla, served with a maple-cinnamon dipping sauce.
Jessica said she based the recipe on one of her favorite combinations, peanut butter with apples.
Organizers of the contest, the J.M. Smucker Co., paid tribute to the "truly outstanding" levels of creativity of competitors, ages 6-12, from around the nation.
Ideas from the four runners-up for other sandwich combinations:
- Chopped green apple, pecans and peanut butter.
- Maple syrup, crunchy peanut butter and bacon.
- S'mores toppings with creamy peanut butter.
- Pecans, jalapeo jelly and peanut butter.
Competitors used whole-wheat bread, bagels, tortillas, and even French toast and waffles.
Peanutty Wrapple Rolls
- 12-inch flour tortilla, burrito size (10-inch size is also fine)
- 3 tablespoons creamy peanut butter
- 2 tablespoons crisp rice cereal
- 1 tablespoon brown sugar, packed down
- 2 tablespoons canned apple-pie filling, or 2 tablespoons fresh apples, finely chopped
For Maple Dipping Sauce:
- 1/4 cup maple syrup
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon cinnamon
Spread tortilla with peanut butter. Spread chopped apple or the apple-pie filling over 1/2 of peanut-buttered tortilla. Next, sprinkle on cereal and brown sugar. Starting at edge with apple filling, roll up tightly and cut into 4 segments.
Mix together dipping-sauce ingredients and place in a bowl. To eat, dip rolls.
Makes 2 servings.
