Best new chefs aren't all in nation's metropolises

NEW YORK — Big cities aren't the only domain of great chefs, if Food & Wine magazine's list of the year's best new chefs is any indication.

"This year's list of 10 best new chefs proves that culinary genius can be found all across the country — from Portland, Maine, to Portland, Ore.," Dana Cowin, editor of Food & Wine magazine, said in a statement.

(Food & Wine has been bringing some of its Best New Chefs panel out to the Big Island each year for the Big Island Festival in the fall, so we may see some of these folks guest-chefing here.)

The magazine's favorite young chefs, who will be featured in the July issue, are:

  • Graham Elliot Bowles, 27, of the Jackson House Inn, Woodstock, Vt.
  • Scott Conant, 33, L'Impero, New York.
  • Scott Dolich, 35, Park Kitchen, Portland, Ore.
  • Rob Evans, 40, Hugo's, Portland, Maine.
  • Dominique Filoni, 33, Savona, Gulph Mills, Pa.
  • Eric Michel Klein, 30, Maple Drive, Los Angeles.
  • Marc Orfaly, 34, Pigalle, Boston.
  • Melissa Perello, 27, Charles Nob Hill, San Francisco.
  • Bradford Thompson, 35, Mary Elaine's at the Phoenician, Scottsdale, Ariz.
  • Mathias Wolf, 30, Gautreau's, New Orleans.

Many of Food & Wine's past picks have delivered on their promise, such as New York chefs Daniel Boulud, Rocco DiSpirito and Nobu Matsuhisa. The 2004 winners will prepare a dinner together at the Food & Wine Magazine Classic at Aspen June 18-20.
