Freeze evaporated milk before whipping it up

Evaporated milk can be whipped: Pour 1 cup milk in small mixer bowl and freeze for 30 minutes. Freeze beaters, too. Whip 1/4 sugar and 1 teaspoon vanilla and use immediately.
