The French have appellation controlee (designated wine regions). Now the Italians want to place pizza under the protection of a Specialita Traditionale Garantita (special tradition guarantee). The Vera Pizza Napoletana (True Neopolitan Pizza) movement has asked the European Union to adopt rules defining real, Naples-style pizza. Among the highly specific guidelines: a base the thickness of a credit card (0.1 inch), thrown by hand, prepared with fresh buffalo-milk mozzarella and extra-virgin olive oil and cooked in a 900-degree wood-fired oven for 90 seconds.
