Maui restaurant on Hot Tables list

D.K. Kodama and Chuck Furuya's Italian restaurant in Kapalua, Maui, called Vino, is the only Hawai'i restaurant on Conde Nast Traveler magazine's annual list of Hot Tables — new restaurants whose design, service, sense of place and food transcend industry standards. Furuya reports that, in addition to the Waikiki steak and seafood house (opening in the fall in the old Third Floor location at the Waikiki Beach Marriott Resort & Spa), the Sansei group is working on a Vino Wine Bar to open in July in the special-functions room at Sansei Seafood Restaurant & Sushi Bar at Restaurant Row in Honolulu.

There will be a Cruvinet wine-preservation system allowing extensive tastings of wine by the glass.


Dolphin Days chefs share recipes

The 10th anniversary Dolphin Days Summer Fest celebration at the Hilton Waikoloa Village will include the debut of a new recipe collection, "Thirty Three Chefs," covering a decade of special chef appearances at the event.

It's a coffee-table style hardcover, 128 pages, edited by Lori Kennedy with food styling by Nina Pfaffenbach and photos by John DeMello. Dolphin Days is June 24 through 27 this year, and the book will be available at the hotel then, or by mail order (after June 22, check www.dolphindays.com for mail order instructions).

Among the chefs whose recipes will be included: Adam Condon of Spago, David Paul Johnson of Kukio Resort, James McDonald of Pacific'O, Russell Siu of 3660 on the Rise and Goran Streng of the Hawaii Prince.
