Popular deli's potato salad gets a makeover

Q. I love the potato salad at Noah's Deli, it's has just enough flavor and they use red potatoes. I buy bagel sandwiches sometimes just so I can have the little cup of potato salad that comes with it. I would love to have a light version for my home needs, though. Can you help?

A. Potato salad is like pizza, everyone has their own preference. Some like potato salad with relish and olives, while other like to keep it simple. Noah's — a deli chain in Northern California and the Pacific Northwest — makes a creamy red potato salad with just enough extras to keep it interesting without going overboard.

I know this potato salad well (being a faithful Noah's customer myself), so I broke down what I believe are the ingredients and created a very similar version with light mayonnaise thinned with apple juice. This is now my favorite potato salad recipe. I hope you like it too.

The same amount of your basic potato salad contains 230 calories, 11 g fat, 2 g saturated fat, and 8 mg cholesterol per serving.

NOAH'S DELI (MOCK) LIGHT POTATO SALAD

  • 8 cups coarsely diced red potatoes (about 3 pounds)
  • 1/2 cup light mayonnaise
  • 2 tablespoons apple juice
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon salt
  • 2 teaspoons sugar
  • 1/3 cup finely chopped celery
  • 1/4 cup finely chopped green pepper
  • 1/3 cup finely chopped sweet or yellow onion

Bring a large pot of water to a boil. Add the coarsely diced potatoes and boil until just tender (about 20 minutes). Drain potatoes well and let cool.

In medium bowl, whisk light mayo, apple juice, vinegar, salt and sugar until smooth. Stir in celery, green pepper and onion.

Place cooled potatoes in large serving bowl. Spoon dressing over the top and toss to blend. Keep covered in the refrigerator until ready to serve.

Makes 12 (3/4-cup) servings

• Per serving: 164 calories, 3 g protein, 31 g carbohydrate, 3.3 g fat (.7 g saturated fat, .5 g monounsaturated fat, 1.5 g polyunsaturated fat), 3 mg cholesterol, 3 g fiber, 151 mg sodium. Calories from fat: 18 percent. Omega-3 fatty acids .2 g. Omega-6 fatty acids 1.3 g. Weight Watchers POINTS 3.
