Dale DeGroff

Well-known drinks expert Dale DeGroff, author of the award-winning "Craft of the Cocktail" and Bon Appetit's Beverage Professional of the Year, is the new "director of beverage arts" for Halekulani Hotel.

As a consultant who will make regular visits to the hotel, DeGroff is charged with teaching the staff about beverage service as well as designing and improving drinks.

He does an eye-opening two-hour introductory course that any member of the staff can attend, and he's expected to create some signature drinks for the hotel.

Fund-raiser celebrates wine and pasta

The annual Honolulu Wine Festival, "Italy Mio Amore," will bring Suzanne Gresham of San Francisco's Acquerello restaurant back to the Islands for a formal dinner at 7 p.m. Friday at the Halekulani ($250), followed by an Italian wine tasting and auction, 5:30 p.m. Saturday at the Sheraton Waikiki ($75, or $100 at the door).

There, a dozen chefs (representing the East and West) will prepare dueling stuffed pasta dishes for tasting (ravioli, won ton). Information: 538-1522. Tickets: Fujioka's Wine Merchants. Events benefit the Hawaii Lupus Foundation.
