Spend an 'Unforgettable' New Year's Eve

Dazzling fireworks will light up the ocean as part of the the property's New Year's Eve gala celebration.

The ticket desk hadn't even officially opened and 300 guests had already reserved their seats for Natalie Cole's New Year's Eve concert at the Hilton Hawaiian Village Beach Resort & Spa.

"We're well on our way to selling 2,000 to 2,500 tickets," said Gary Manago, Hilton's director of food and beverage. "It's going to be rockn' and a rollin' — not only in the Coral Ballroom — but throughout the entire property that night."

Every year, Hilton brings in a big-name act to help usher in the new year. Last year, it was Wayne "Mr. Las Vegas" Newton. And the year before, it was Kenny Loggins.

"It's a big night that needs a big name," said Noel Trainor, Hilton's general manager. "And Natalie Cole fits the bill."

Natalie Cole will perform songs from "Unforgettable, With Love."

Tickets cost $90 for general seating, $120 for Silver seats, $170 for Gold chairs and $200 for the premium Platinum section. (A special room-and-show package is available, with prices starting at $450.)

"Guests will receive party favors, a half-bottle of sparkling wine and one standard cocktail," Manago said. "It's going to be a great show with a lot of energy."

While Cole has yet to determine her set for that night, revelers can expect her to sing hits from her critically acclaimed "Unforgettable, With Love," which sold 14 million copies worldwide and earned the talented entertainer seven Grammy Awards.

"Her stirring, soulful sounds have a way of reaching different generations and genres," Trainor said. "So, we can't think of a better performer to help us close out 2005 and ring in 2006."

Also helping to welcome in the new year are chefs from Hilton's four signature restaurants.

At Bali by the Sea, chef Adam Hightower will pamper guests with a lavish seven-course dinner, complete with a lobster-and-truffle salad, sugarcane-crusted scallop, Island-style cioppino, petit baby Island green salad, champagne sorbet, dessert sampler and a choice from among such entrees as grilled ahi tuna, veal Oscar and vegetarian couscous strudel. Cost is $115 per person.

At Village Steak & Seafood, the evening's four-course menu is priced at $80 for adults and $40 for kids 4 to 11 years.

In addition to starting with a seafood-tomato-and-ginger soup and sesame-seed-crusted ahi tuna, patrons will have a selection of entree, including a six-ounce grilled filet mignon, roasted Muscovy duck breast and fresh catch of the day with an Australian lobster tail.

Dinner concludes with the signature "Flaming Diamond Head," a pistachio-chocolate-and-banana ice cream blanketed with a strawberry sauce.

For those in search of a New Year's Eve buffet, Rainbow Lanai's lineup will showcase a carving station with slow-roasted prime rib and mahi mahi lau lau, and such hot items as sauteed veal, salmon en croute and oysters Rockefeller. Cost is $53.50 for adults and $27 for keiki.

Golden Dragon will feature its own gala dinner for $81.50 for adults and $41 for kids 12 years and younger.

"It'll be an 'Unforgettable' night," Manago said. "How could it not be with Natalie Cole here?"
