For your own holiday happening, a very tasty, non-dairy eggnog served by Halekulani beverage arts manager and world-famous mixologist Dale DeGroff, left, at his holiday cocktails class earlier this month:

  • 1/2-ounce bourbon
  • 1/2-ounce rum
  • 3 ounces fresh cider
  • 1 egg (medium or small)
  • 1 ounce simple syrup (a mixture of equal parts brown sugar and water, brought to a slight boil)

    Shake all ingredients well with ice to completely emulsify the egg. Strain into a glass of crushed ice. Grate fresh nutmeg over the top. Serves only one, so multiply the recipe and throw a party to avoid drinking alone.
