Kahala Mandarin restarting course on kitchen essentials

Executive chef Wayne Hirabayashi has announced that the Kahala Mandarin Oriental Hawaii is reviving its cooking class series with "Fundamentals of Cooking I," a six-class course in the proper use of utensils, understanding seasonings, making stocks and sauces and other basics, beginning Saturday.

Future courses, all taught from 11 a.m. to 2 p.m. on Saturdays in Hoku's restaurant at the hotel, cover baking, special events, more fundamentals, a master chef series and party planning.

Some classes are demonstration (with tasting), others hands-on; fees are $55 per class for demonstrations, $115-$125 for hands-on classes. Reservations: 739-8780.



Restaurants plan tsunami fund-raiser

Chef/restaurateur Chai Chaowasaree is organizing a fund-raiser Monday evening at Aloha Tower Marketplace to benefit victims of the Indian Ocean tsunamis. The goal: to raise $100,000 for the American Red Cross.

Participating eateries are a who's who of important Hawai'i restaurants (Alan Wong's, 3660 on the Rise, Sansei, Diamond Head Grill, Keo's and more), and entertainment includes contemporary Hawaiian-music stars the Brothers Cazimero, Kapono, HAPA, Jake Shimabukuro, Jerry Santos and Friends, Na Palapalai and Maunalua.
