YAMAGUCHI SHARES FISH SMARTS IN COOKBOOK

  • Roy Yamaguchi's new cookbook, "Roy's Fish & Seafood, Recipes from the Pacific Rim" by Roy Yamaguchi (with John Harrisson) (10 Speed Press, hardback, $35), is out now. Yamaguchi takes a teacherly approach that will be helpful to home cooks afraid of or confused by the topic. The book identifies the various names (English, Latin and often Hawaiian, Japanese or other common names) of each of the 16 fish found on Roy's menus, offers a general description, covers uses, flavor and cooking qualities, suggests alternatives and then shares recipes.

  • Before you head to Merrie Monarch or the Kona Coffee Festival, pick up a copy of "50 Thrifty Big Island Restaurants" by Jessica Ferracane (Watermark, paper, $6.95), a guide to inexpensive (or less expensive) eating all over the Big Island. The format is the same as Watermark's popular Puka, Okazu and Omiyage guides — picture and FYI on one side, narrative on the facing page. Ferracane has a sprightly style and good eye for detail. One nice feature: each region is divided up into recommendations for breakfast, lunch and dinner.

  • Just a note: The sponsors of Sutter Home's annual America's Best Burger competition have released "Build a Better Burger," (10 Speed Press, paper, $17.95), and it includes Mauian Kristine Shyder's 2001 Grand Prize winner, Soy-Glazed Salmon Burgers with Ginger-Lime Aioli.

    LITTLE KITCHENS UNITE FOR BENEFIT

    "Little Kitchens: Big Flavors from Honolulu's Best Little Kitchens," 5:30-8 p.m. tomorrow at the Hawai'i State Art Museum, is a chance to celebrate small restaurants and homegrown Island foods while strolling the art galleries (which will be kept open) and helping to fund Slow Food O'ahu and the Schoolyard Edible Gardens project. Participants include Town, Green Door Cafe, Honolulu Chocolate Co., La Gelateria, BluWater Grill, Olive Tree Cafe, Indigo Eurasian Cuisine, Ono Pono Vegetarian Grinds, 808, 12th Ave. Grill, Ma'o Organic Farm, Grand Cafe & Bakery.
