Orders must be placed at least 48 hours in advance.

For the past couple of years, Jeanine Mamiya-Kalahiki has reserved her family's complete turkey-to-go package from Zippy's. And she plans to do the same this Thanksgiving.

"Now my secret's out," quipped Mamiya-Kalahiki, Zippy's marketing manager. "My family always thought that I cooked the turkey on my own."

Since the 23-location, locally-owned restaurant introduced its Thanksgiving meals to-go eight years ago, the company has seen a surge in demand.

"This year, we're expecting an 18-percent increase over last year's numbers," Mamiya-Kalahiki said. "And most of that will come from our whole turkey packages."

The double-digit spike in demand has prompted this Island favorite chain of restaurants to change this year's pick-up format.

Whereas in years past residents could pick up their turkey-to-go dinners at all Zippy's locations, this year they'll only be able to do so at designated "satellite" restaurants, according to Nelson Miyasato.

"We're hoping that this will improve service and speed up the process," said the McCully store manager. "Some stores will have refrigerated trucks in the parking lot with staff members directing drivers where to pull up to pick up their turkeys."

In addition to Miyasato's McCully store, other locations that will offer this type of drive-thru service will be Zippy's in Kahala, Vineyard, Waiau, Mililani and Waipahu.

Patrons will be required to enter the sites in Kaneohe, Kailua, Koko Marina and Kapolei in order to pick up their dinner.

"This format will allow us to accommodate more customers," said Michael Higuchi, central ordering coordinator for Zippy's. "Based on past numbers, we've allotted each store a certain number of whole and half-turkey packages."

The Vineyard store will see the highest volume, followed by the McCully location.

"I get here at 6 a.m. on Thanksgiving Day and it's go, go, go," said Miyasato, who will bring one of these holiday dinners home to his family. "People will start picking them up at 9 a.m. and it won't stop until 4 p.m."

For $29.95, the four- to five-pound, half-turkey dinner for four consists of two pounds each of stuffing, mashed potatoes and poultry gravy; a half pound of cranberry-pineapple relish; and six sweet dinner rolls.

For families of up to 10, an eight- to 10-pound turkey dinner comes complete with all the traditional trimmings, including four pounds each of stuffing, poultry gravy and mashed potatoes; a pound of cranberry-pineapple relish; and a dozen sweet dinner rolls. Cost is $56.95.

Both turkey packages will have been refrigerated, and will come with full re-heating instructions.

Napoleon's pumpkin and pumpkin-custard pies are made from scratch.
Pick-up dates can be arranged the day before Thanksgiving or on Thanksgiving Day itself.

"Depending on your oven, it takes about an hour and a half to re-heat," Miyasato said. "It's so much easier than cooking a turkey on your own."

All Zippy's locations will also offer roast turkey plates ($8.60 dine-in or $7.10 at the fast-food counter), baked ham with rum-raisin sauce ($7.75/$6.25) and a combination of the two ($9.90).

Stuffed salmon ($10.65) and Zippy's regular a la carte menu will be available during Thanksgiving Day, as well.

"My biggest challenge that day is keeping up with all the cooking," Miyasato said. "I've got to make sure we don't run out of food. And we never do."
