There is a shortage of Roselani’s ever-popular haupia ice cream.

On The Valley Isle, Maui Culinary Academy students will benefit from the 10th annual Noble Grape celebration — both from the proceeds of the event and from the chance to take master classes with distinguished visiting chefs. Guests this year include Andrew Carmellini of the critically acclaimed A Voce restaurant in New York, and pastry chef Stanton Ho of Chocolates A La Carte in Las Vegas, originally from Hawai'i. O'ahu seafood supplier T.J. Kraft, Ltd./Norpac Fisheries Export made the connection with Carmellini and is sponsoring his visit. Southern Wine & Spirits is supplying wines to pair with dishes from many of Maui's best restaurants. The Noble Grape is 6 to 9 p.m. Oct. 21 at The Fairmont Kea Lani Maui Palm Court with tickets at $150 per person. All proceeds benefit Maui Culinary Academy. Tickets: (808) 984-3261.

Roselani looking for coconut-base substitute for its haupia ice cream

If you've heard that Roselani Ice Cream is discontinuing its popular haupia flavor, you've heard wrong. There is a current shortage of the flavor because Roselani's longtime coconut-milk supplier has dried up. The ice cream company is looking for a high-quality replacement. Third-generation ice cream maker Cathy Nobriga Kim says she won't risk the reputation of her grandfather's recipe by rushing into production with a coconut base that might not taste just right.

"We've been testing alternatives," says Nobriga Kim in a press release. "So far, none of them measure up, but we're continuing to experiment." The flavor will be back in freezers as soon she finds the right stuff.
