Alan Wong's pastry chef leaves to run own bakery

Pastry chef Mark Okumura, a founding chef at Alan Wong's Restaurant, is leaving the award-winning establishment Oct. 31 to pursue his long-held dream of owning a bakery. He is taking over the bakery operation at restaurateur Raymond Siu's Pah Ke's Bakery and Deli at Ranch 99 Supermarket in Mapunapuna.

Eleven years ago, Wong hired Okumura away from Halekulani. Okumura was part of the Alan Wong's management team that crafted the original menu, and helped launch Wong's restaurants at Ala Moana and in Japan.

An Okumura protege, Michelle Karr, will take over as pastry chef at Alan Wong's Restaurant, creating the hand-made desserts and chocolates for which the restaurant is known.
