Chef Mavro will add new 'casual' dining spot in spring

George Mavrothalassitis, chef-owner of vaunted Chef Mavro, will take over the space now occupied by Palomino in Harbor Court to open Cassis Honolulu this spring.

"Of course my flagship Chef Mavro restaurant will continue exactly as it is right now. My second restaurant, Cassis Honolulu, will offer food for more everyday dining," said Mavrothalassitis in a written statement.

"People are always asking me to open a casuaI restaurant where they can drop in frequently for lunch or cocktails or dinner," Mavro said.

The cuisine will be a contemporary Hawai'i Regional spin on bistro classics. Rotisserie chicken gets a plum wine sauce and steak frites (at long last on a Honolulu menu) comes with curried fries and Manoa salad. Chef Mavro fans can rejoice — the li hing mui tarte tatin will also be available at Cassis Honolulu.

The new restaurant's name refers to the town in the south of France where Mavrothalassitis lived and owned a restaurant before moving to the United States.
