Hoku's focuses on pumpkin in new special menu

Hoku's at the Kahala Hotel Resort seasonal focus menu takes aim at the pumpkin. Chef Wayne Hirabayashi's Pumpkin Pinot focus menu, available Nov. 12 to 18, combines autumn's flavors and textures in the run-up to the holiday season.

On the menu: an amuse bouche featuring pumpkin panna cotta, alii mushroom chips and chiso pesto; pumpkin chowder with rock lobster, andouille sausage and roasted Kahuku corn foam; Tasmanian salmon cooked sous-vide with tarragon, and served with a pumpkin Pinot Blanc terrine, arugula salad and Meyers lemon vinaigrette; miso pumpkin-braised Black Angus short ribs, jasmine-spiced pumpkin seed rice and pickled pumpkin salad; praline-pumpkin terrine served with apple crumble compote and spiced sabayon.

Price: $70 per person, not including tax and tip.
