Hoku's new 'focus menu' focuses on sake Oct. 15-21

Hoku's chef Wayne Hirabayashi is teaming up with Joy of Sake organizer Chris Pearce for a food-and-sake pairing menu that will be available Oct. 15-21 at the Kahala Hotel & Resort restaurant.

Premium sakes will be paired with these Hirabayashi dishes:

amuse bouche of Big Island kampachi ceviche; seared yellow fin 'ahi, grilled hamachi kama, king crab tempura and ali'i mushroom chips, an intermezzo of hon dashi with Big Island baby abalone, roasted miso-glazed duck breast. A refreshing pink plum sake granite and lime cookies top off the meal.

Cost: $72, which includes sake pairings.
