Dolphin Days at Hilton Waikoloa Village, celebrating a dolphin calf born at the resort, is in its 14th year. Over the years, the four-day event has evolved into a spectacular culinary affair hosted by Hawai'i's most innovative chefs. "Thirty Four Chefs" is a new collection of their recipes and back stories paired with John De Mello's mouth-watering photographs. Yes, some dishes require many ingredients, and many of us won't have a cryovac machine and bags at the ready to cook salmon (you may substitute a zip-closure bag) but the results are so elegant and visually appealing, Hawai'i home chefs will take on the challenge.

The book's final section on Big Island growers covers less-familiar produce, farms, orchards, livestock and aquaculture, with a helpful glossary translation of unfamiliar cooking terms. Proceeds go to Hawai'i Shriners Hospital for Children and Pacific Marine Life Foundation, $14.

FRESH LOCAL PRODUCE, HEALTH ADVICE AND FUN

Food is fuel for energy and good health, right? Learn more about Hawai'i's produce, and how to include fresh fruits and vegetables in your diet at the Hawaii Medical Service Association Island Fresh Festival this weekend. Local chefs will show you how with cooking demonstrations, a huge farmers market to wander, food to eat, of course, and health information. Also: entertainment on the main stage, keiki games and the TumbleBus, a watermelon-eating contest by Sugarland Farms and prize giveaways. The Pacific Handcrafters Guild craft fair will also be at Kaka'ako Gateway Park. 9 a.m. to 4 p.m. Saturday. Admission free.
