It's all about healthy eating and activities at today's family-friendly HMSA Island Fresh Festival at Kaka'ako Gateway Park.

On the menu: food booths and a farmers' market; cooking demonstrations (see the Licious Dishes recipe for tatsoi salad, which will be prepared onstage and available for sampling); games and other activities, including the TumbleBus, sort of a gym on wheels, for kids.

Entertainment is of the active kind:

  • belly dancing by Shadiya

  • exercising with Jazzercise Aiea

  • salsa dancing by Hot Salsa Hawaii

  • taiko drumming by the Taiko Center of the Pacific Youth Group

  • lion dancing by Gee Yung International Martial Arts and Lion Dance

  • Tahitian dancing by Tiare Apetahi

  • hula and modern dancing by Tau Dance Theater.

    A portion of the proceeds will go to Lanakila's Meals on Wheels program.

    Tatsoi Salad

  • 1/2 tablespoon minced garlic
  • 1/4 teaspoon sea salt
  • 1 tablespoon unpasteurized apple cider vinegar
  • 1 tablespoon lime juice
  • 3 tablespoons extra-virgin olive oil
  • 1/4 red onion, thinly sliced
  • 5 cups tatsoi (Nalo greens), rinsed
  • 1 tablespoon chopped fresh mint
  • 8 Greek or Napa olives, pitted and chopped
  • Freshly ground pepper
    Place minced garlic in a glass jar. Add salt and grind it into the garlic with a spoon to take some of the bite out of the garlic. Add apple cider vinegar, lime juice, olive oil, and onion. Cover jar and shake well. Set aside for 30 minutes to allow onions to marinate and soften.
    Dry tatsoi in a salad spinner and place in a bowl. Add mint and olives; pour contents of jar over tatsoi. Add freshly ground pepper to taste. Toss well. Makes 5 servings.
